Nut Roast

A vegetarian nut roast with a meaty texture wrapped in vegan bacon

A rich and decadent Nut Roast wrapped in meat free bacon

For the vegetarians in your life that can’t partake in the Sunday Roast, this alternative is a great option. Rich and flavourful, with a herby finish and a beautiful texture that allows it to be carved like meat. This has always been a winner ever since my older sister turned veggie a few years back.

Ingredients:

  • 300g Walnuts, crushed

  • 1 Vegan Stock Pot

  • 2 tbsp Butter (Dairy Free if desired)

  • 1 Onion, finely chopped

  • 2 Carrots, grated

  • 200g Mushrooms, minced

  • 1 tbsp Tomato Puree

  • 1 tbsp Mixed Herbs

  • 1 sprig Fresh Rosemary

  • 100g Fresh Breadcrumbs (Gluten Free if desired)

  • Vegan Bacon to wrap (I usually use Denny’s for this)

Method:

Sautee Veg in the Butter and add the Tomato Puree, Mixed Herbs, Crushed Nuts, and Breadcrumbs.

Add in Vegan Stock Pot and a small amount of water to dissolve. Mix until well incorporated.

Add water until a shape able dough forms.

Shape into a roast shape, and then place in the freezer for an hour to firm up.

Make a lattice out of your Meat Free Bacon, and roll the roast in the bacon.

Wrap in foil to hold shape, bake for 30 minutes at 180C.
